Autumn is in full swing and we love it! The trees are changing their colors to red, yellow and brown, you can already see your own breath in the mornings and evenings and the woods and meadows in the countryside are enveloped with fog sometimes.
And what makes you feel even more like autumn? Pumpkins, right?! We love pumpkins and could eat them in every possible way right now. This time we decided to make pumpkin waffles. It’s the perfect breakfast (or lunch, or dinner) for a cozy and cold autumn day and together with the plum compote, coconut yoghurt and pecan nuts it tastes like heaven on earth. Another thing we are very excited about these days are our new rings from Rebecca Mir Grady that you can see on some of the pictures. This lady is so crazy talented!! We discovered her beautiful Jewellery some time ago accidentally and never seen more beautiful jewellery before!! We already think about what to order next, christmas is coming soon, right?!

Gluten-free Pumpkin Waffles with Plum-Rosemary Compote and Coconut Yoghurt
Ingredients for 8-10 waffles for about 4 persons
Pumpkin batter
- ½ medium sized hokkaido pumpkin (makes 180-200g pumkin puree)
- 2 eggs
- 2 cups milk (480ml milk)
- 3 tbsp butter
- 280g buckwheat flour
- 3 tbsp sugar
- 3 tsp organic tartar baking powder
- 2 tsp cinnamon (or ground cinnamon clove)
- 1 dash of salt
- coconut oil (for baking)
Plum-rosemary compote
- 100g sugar
- 250ml chokeberry-apple juice (or red grape juice or another red juice you like)
- 400g plums (weight without the pits)
- 1 sprig rosmary
- 1 small piece ginger
- 1-2 tsp cornstarch
Topping
- 250g coconut yoghurt
- 100g pecan nuts, roughly chopped
- pomegranate seeds
Prepare the pumpkin purée
Cut off a bit of the top and bottom of your pumpkin, then quarter the pumpkin and remove the seeds. Bake quarters at 200°C (400°F) top/bottomon a baking sheet until they are tender – about 30-40min (leave oven on, but switch to 100degrees – for later to keep the waffles warm). Meanwhile prepare the plum compote.
Plum-rosemary compote
Wash, pit and quarter plums, caramelize sugar in a medium sized saucepan, then deglaze with the juice, stir until well combined, add the plums, rosmary sprig and (peeled) ginger piece and boil for 5min until plums are soft. Remove ginger and rosmary and place the plums into a bowl. Heat the juice again and thicken with a 1-2 tsp cornstarch (mix the cornstarch with 2tbsp water before you add to the juice). Place plums back into the juice sauce and warm again, when you serve.
Waffle batter
Melt the butter. Scrape out pumpkin flesh and blenderize with ½ cup milk. Beat the egg in a mixing bowl for 2 min, whisk in the melted butter, then the milk and in the end the pumpkin purée until everything is well combined. Blend dry ingredients (flour, salt, sugar, baking powder, cinnamon). Stir dry ingredients into pumpkin-egg-milk-mixture just until combined (use a cooking spoon or silicone spatula for stirring). Heat your electric waffle maker, brush the surface with a bit coconut oil and bake the waffles, place them in the warm oven until you are done with all waffles. Serve waffles with coconut yoghurt, warm plum compote, pomegrante seeds and pecan nuts!

Der Herbst zeigt sich endlich in seiner vollen Pracht und wir lieben es! Die Blätter an den Bäumen werden langsam rot, gelb und braun, morgens und abends kann man bei den kühleren Temperaturen schon seinen eigenen Atem sehen und die Wälder und Wiesen auf dem Land sind manchmal schon in dichten Nebel eingehüllt. Und was lässt einen in der Küche so richtig nach Herbst fühlen? Kürbisse, oder?! Wir könnten sie gerade in jeglicher möglichen Kombination essen – dieses mal haben wir uns für Kürbiswaffeln entschieden. Sie sind der perfekte Schmaus für ein gemütliches, süßes Frühstück an einem kühlem Herbsttag und in Kombination mit dem Pflaumenkompott, Pecannüssen und Kokosjoguhurt schmecken sie einfach nur himmlisch!
Wovon wir in den letzten Tagen auch mehr als begeistert sind, sind unsere neuen Ringe vonRebecca Mir Grady, die ihr auf einigen der Bilder sehen könnt. Rebecca ist einfach unfassbar talentiert! Wir haben ihren wunderschönen Schmuckvor einiger Zeit durch Zufall entdecktund haben bisher nie schöneren gesehen. Wir überlegen schon was wir als nächstes bestellen, Weihnachten steht ja schließlich vor der Tür.

Glutenfreie Kürbis-Waffeln mit Rosmarin-Pflaumenkompott, Pekannüssen und Kokosjoghurt
Zutaten für 8-10 Waffeln oder 4 Personen
Kürbiswaffeln
- ½ mittelgroßen Hokkaido Kürbis (ergibt etwa 180-200g Kürbispüree)
- 2 Eier
- 480ml Milch
- 3 EL Butter
- 280g Buchweizenmehl
- 3 EL Zucker
- 3 TL Weinsteinbackpulver
- 2 TL Zimt (oder gemahlene Zimtnelken)
- 1 Prise Salz
- Kokosöl (zum ausbacken)
Pflaumenkompott
- 100g Zucker
- 250ml Apfel-Aroniasaft (oder roter Traubensaft oder ein anderer roter Saft, den man mag)
- 400g Pflaumen (Gewicht ohne Kerne)
- 1 Zweig Rosmarin
- 1 kleines Stück Ingwer
- 1-2 TL Maisstärke
Topping
- 250g Kokos-Joghurt
- 100g Pekannüsse, grob gehackt
- Granatapfelkerne
Mit dem Kürbispüree anfangen
Den oberen und unteren Teil des Kürbis abschneiden, den Kürbis vierteln und die Kerne entfernen. Kürbisvertel auf einem Backblech bei 200°COber-/Unterhitze 30-40min backen bis das Kürbisfleisch weich ist (anschliessend den ofen auf 100°C runterfahren – zum warmhalten der Waffeln).
Während des Kürbis-backens das Pflaumenkompott vorbereiten.
Pflaumenkompott
Pflaumen waschen, entsteinen und vierteln. Zucker in einem mittelgroßen Topf karamellisieren, dann mit dem Saft ablöschen und rühren bis alles gut vermischt ist. Pflaumen, Rosmarinzweig und (geschälten) Ingwer hinzufügen und für 5min köcheln lassen bis die Pflaumen weich sind. Ingwer und Rosmarinzweig entfernen und die Pflaumen in eine Schüssel geben. Den Saft erwärmen und mit 1-2 TL Maisstärke binden (Maisstärke vorher mit 2EL Wasser verrühren). Pflaumen zurück in den Topf geben und kurz vor dem Servieren nochmals erwärmen.
Waffelteig
Butter schmelzen. Kürbisfleisch aus den Kürbisvierteln kratzen und mit etwa 120ml Milch mixen/pürieren. Das Ei für 2min mit dem Handmixer aufschlagen, dann die flüssige Butter unterschlagen, dann die Milch und zum Schluss das Kürbispüree bis alles gut vermischt ist. Trockene Zutaten (Mehl, Zucker, Salz, Weinsteinbackpulver, Zimt) mischen und zu der flüssigen Masse geben. Mit einem Kochlöffel oder Silikonspachtel 1min verrühren bis eine geschmeidige Masse entsteht. Waffelmaschine erwärmen und mit Kokosöl bestreichen. Nacheinander Waffeln ausbacken, in den Ofen legen bis alle Waffeln ausgebacken sind. Waffeln mit Kokosjoghurt, warmem Pflaumenkompott, Granatapfelkernen und Pekannüssen servieren!
